Ayurveda Kitchari Cleanse Recipe
Ayurveda uses remedies that are all-natural and treat the root cause of the disease, rather than just the symptoms
Vegetarian Ayurvedic digestive stew
Spice Mix:
- 1 tsp salt
- 1/2 tsp black pepper
-
1 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp fennel
- 1/2 tsp turmeric
Ingredients:
- 2 tbsp Ghee
- 1/2 c Cilantro
- 1/2 Fennel Stalk, cut into small chunks
- 1c white basmati rice
- 1/2 c Sprouted Mung Beans ( See instructions) ( Buy Mung beans at Whole Foods)
- 6 c Water or Broth ( veggie or bone)
- 3 c assorted veggies ( Ex: Zucchini, Fennel Root, Carrots, Broccoli, Purple Cabbage, Beet, Yam, Sweet Potato, Cauliflower, Celery, Kale, Leafy Greens, Carrots, Parsnip… etc)
- Sprout Mung Beans: Place beans in a bowl. Fill the bowl with just enough water to cover mung beans. Leave covered for 24 hours until the beans sprout.
- Prep the veggies, fennel stalk and cilantro. Chop Cilantro finely and cut veggies/ fennel stalk into thick bite size pieces. Set to the side.
- Grind Spices together
- Add Ghee to a large pot. Heat over medium until it becomes liquid.
- Add Spices. Gently stir spices to combine with Ghee. Use a wooden spoon.
- Once you begin to smell the aroma of spices, add the cilantro. Gently stir cilantro for 30 seconds.
- Add mung beans, rice & fennel stalk. Stir for 1 minute. 8) Add Water or Broth
- Bring to a boil for 5 minutes. Add veggies.
- Let kitchari boil for another few minutes.
- Reduce to a simmer. Set the lid slightly ajar.
- Let kitchari cook for 40-45 minutes.
- Serve in individual dishes with 1 tsp of plain ghee or with optional toppings.
- 2 tbsp whole coriander seeds 1 tbsp whole cumin seeds
- 1 tbsp whole fenugreek seeds 1 tbsp ground ginger
- 1 tbsp ground turmeric
- 1 tbsp ground cinnamon
- 1 tbsp dried sage leaves
- 1 tsp ground clove
- 1⁄2 tsp cayenne or chilli powder
Congestion Steam Remedy
Instructions:
- Low medium boil 4 cups of water
- Add 2 tsp turmeric
- Add 2 tsp Rock salt
- 1 small pearl onion
- 2 basil leaves
Once water is at a low medium boil steam, take the pot and place it on table with a pot holder or towel to protect the table, wait for about 1 minute then lean face towards the steam and place a small towel over head and inhale the steam for approximately 1 minute. Be Careful not to place your face too close to the steaming pot and if you feel it is too hot then move your face further away from the pot or do not try.
Cold/Cough/Sore Throat Tea Remedy
- 1/2 tsp Turmeric
- 1/2 tsp Dry Ginger Powder
- 1 black pepper (freshly crushed) or 2 pinch of black pepper powder
- 1 tsp Pure Honey (optional)
Instructions: Bring water to a low boil, pour water into your tea cup, then place the ingredients except for the honey into a tea bag or tea pod and steep for 7-10 minutes in the water. Add honey after steeping if you like. Enjoy this lovely tea 2-3 times a day, approximately 1 hour before or after meals.
