Ayurveda Lentil Soup Recipe

Enjoy this delicious Ayurveda Lentil Soup Recipe and Anti-Inflammatory Turmeric Lemonade. Lentil Soup Ingredients

  • 3 tbsp Coconut Oil or Ghee
  • 1/2 onion, finely chopped
  • 3 Garlic cloves, crushed and finely chopped
  • 1 tbsp fresh ginger, chopped
  • 3 potatoes, chopped into small dices
  • 2 carrots, chopped into small dices
  • 1 apple, chopped into small dices
  • 2 cups red lentils
  • 6 cups vegetable broth
  • 2 tomatoes, diced
  • Spices 2 tbsp curry
  • 1 tsp turmeric
  • 1/2 tsp chilli powder
  • 3 tbsp fresh cilantro, finely chopped
  • 1 tsp pink Himalayan salt

Instructions

Heat oil in a big soup pot on medium heat
Add onion, garlic, ginger and all the spices
After about a minute, add potatoes, carrots, apple and lentils, sir it around another minute before adding the vegetable stock
Turn down the heat and let it simmer for (30 minutes), stir occasionally
Add the tomatoes and let it simmer for 5-10 minutes more
The soup is done when the lentils are dissolved and the potatoes are soft

Option to serve with raw spinach leaves placed in bowl + add lentil soup on top.
Top off with Avocado and Nutritional Yeast Seasoning

Anti-Inflammatory Turmeric Lemonade

Ingredients

  • 1 cup fresh squeezed lemon juice
  • 8 cups water
  • 2 teaspoons ground turmeric
  • 1 teaspoon liquid stevia
  • Pinch of black pepper

Directions:
Add all your lemonade ingredients to a large mason jar or pitcher. Shake or mix it up and serve over ice.
If you’re serving it in a pitcher, add lemon slices for looks and extra lemon flavor!
